Vegan Banana Bread Muffins

Before the assumption is made I should clarify - I AM NOT A VEGAN. But that's not to say I don't appreciate a good, clean vegan recipe, especially if I want something sweet and tasty (aside from fruit) while still eating clean and feeling healthy. In other words, I want to eat like a food junkie without actually feeling like one.

I'm actually surprised at how well these turned out. Inspired by minimalistbaker, here's my take on vegan banana bread muffins!

Ingredients...

  • 2 flax eggs

  • 2 large bananas

  • 1/2 cup dark brown sugar

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/2 tsp sea salt

  • 1 cup whole wheat flour

  • 1/2 cup rolled oats

  • powdered sugar and peanut butter granola (optional)

Instructions

- Preheat oven to 375 degrees F

- mix eggs in a mixing bowl

-mash bananas and add to eggs in mixing bowl

- add dark brown sugar, baking soda and salt

- whisk for about 60 secs

- stir in vanilla and melted coconut oil and mix

- Add oats and flour and stir

- Fill the cups of a lightly greased muffin tin about 3/4 full

- Bake for 15 mins

- Allow to cool for about 30 minutes

- Lightly dust the top of muffins with powdered sugar and sprinkle with your choice of granola (if desired). I like the soft texture of the powdered sugar and the crunch of the granola. I chose peanut butter because it compliments banana flavor so well!

Enjoy!

The post about vegan banana bread muffins is really inspiring because it shows how simple ingredients can create tasty and healthy treats. I tried baking while juggling a busy study schedule and realised small, creative breaks help refresh focus. During that period, I also relied on Java Assignment helpers UK while keeping up with coding tasks, which made managing everything easier. The post shows how combining creativity with discipline can make daily routines more enjoyable.

These vegan banana bread muffins sound perfect for anyone who wants a simple homemade snack that still feels healthy and comforting. I liked how the recipe focused on easy ingredients because quick recipes were always helpful during my college days when life felt busy, especially during semesters when I even used an Essay Writing Service once to manage assignment pressure. Banana muffins are honestly one of those foods that make stressful days feel a little better and more relaxing.

I read your post about vegan banana bread muffins, and it really made the recipe feel simple and comforting. It reminded me of trying baking at home during a busy study week and enjoying small breaks like that. At the same time, I once searched for an Algebra Assignment Writer to help me manage difficult topics. Your post shows how small homemade moments can make a normal day feel better.
